Tasty and Healthful Mediterranean Quinoa Salad Recipe

Quinoa has gained popularity in recent years as a versatile and nutritious grain. To make this Mediterranean quinoa salad, you will need the following ingredients:
– 1 cup quinoa
– 2 cups water
– 1 cucumber, diced
– 1 red bell pepper, diced
– 1 yellow bell pepper, diced
– 1/2 red onion, finely chopped
– 1 cup cherry tomatoes, halved
– 1/2 cup pitted Kalamata olives, sliced
– 1/2 cup crumbled feta cheese
– 1/4 cup chopped fresh parsley
– 1/4 cup chopped fresh mint
– 1/4 cup extra-virgin olive oil
– Juice of 1 lemon
– Salt and pepper to taste

Start by rinsing the quinoa under cold water to remove any bitter taste. In a medium-sized saucepan, bring the water to a boil and add the quinoa. Reduce the heat to low, cover, and let it simmer for about 15 minutes or until all the water is absorbed. Fluff the quinoa with a fork and let it cool.
